  • 1 bunch King Oyster Mushrooms
  • 1 Korean Green Chili Pepper
  • 1/2 Onion
  • 1/3 Boiled Octopus
  • 2 Eggs
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Oyster Sauce
  • Sesame Oil, to taste
  • Toasted Sesame Seeds, to taste
  • Cooking Oil, for stir-frying

Cooking Instructions

Step 1

First, prepare all your ingredients. Lightly rinse the king oyster mushrooms under running water and pat them dry. Finely slice or mince the onion and Korean green chili pepper. Cut the boiled octopus into bite-sized pieces (about 1cm thick).

Step 2

Heat 1-2 tablespoons of cooking oil in a frying pan over medium heat. Once the pan is hot, add the minced garlic and sliced onion. Stir-fry until fragrant and the onion becomes translucent. Sautéing until the onion is softened and slightly transparent is recommended.

Step 3

Once the onion is partially cooked, add the prepared king oyster mushrooms to the pan and stir-fry them together. As the mushrooms start to soften, add 1 tablespoon of oyster sauce and stir-fry until the mushrooms are evenly coated and flavored. Oyster sauce adds a wonderful umami depth.

Step 4

Now, add the cut octopus and Korean green chili pepper to the pan. Stir-fry for another 1-2 minutes until all ingredients are well combined. Be careful not to overcook the octopus, as it can become tough. In the final moments, drizzle in some sesame oil and sprinkle in toasted sesame seeds, stirring once more to infuse the flavors.

Step 5

In a separate small bowl, crack the 2 eggs and add a pinch of salt. Whisk them together thoroughly. This is for making the scrambled eggs to accompany the rice.

Step 6

Lightly oil a clean frying pan and pour in the whisked eggs. As the eggs begin to set, gently stir and break them up with a spatula to create soft scrambled eggs. Avoid overcooking them; soft, fluffy scrambled eggs will mix beautifully with the rice.

Step 7

Place a serving of warm rice into a bowl. Arrange the freshly made, soft scrambled eggs attractively on top of the rice.
