- 3 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes – adjust to spice preference)
- 1 Tbsp Minced Garlic
- 1 Tbsp Plum Extract (Maesil Cheong)
- 1 Tbsp Corn Syrup or Oligosaccharide (for gloss and sweetness)
- 3 Tbsp Vinegar
- 2 Tbsp Sugar (adjust to taste)
- 2 tsp Toasted Sesame Seeds
Cooking Instructions
Step 1
Wash the king oyster mushrooms thoroughly under running water and pat them dry. Slice them in half lengthwise or into bite-sized pieces, ensuring they are not too small to maintain a good chewy texture. Set aside.
Step 2
Wash the cucumber and trim off the ends. Slice it thinly into matchsticks. Peel the onion, slice it thinly into matchsticks, and then soak it in cold water for a few minutes to remove any sharp flavor. Squeeze out the excess water. Trim and wash the water dropwort, then cut it into 3-4cm lengths. Peel the carrot and slice it into thin matchsticks. Aim for uniform thickness for all vegetables so the dressing coats them evenly.
Step 3
Place the prepared king oyster mushrooms, cucumber, onion, water dropwort, and carrot into a large mixing bowl. In a separate smaller bowl, combine all the dressing ingredients: gochujang, gochugaru, minced garlic, plum extract, corn syrup, vinegar, sugar, and toasted sesame seeds. Whisk them together until well combined to create a flavorful sauce. Letting the dressing sit for a few minutes allows the flavors to meld beautifully.
Step 4
Pour the prepared dressing over the ingredients in the large bowl. Using your hands (wearing gloves) or a spatula, gently toss everything together to coat evenly without crushing the ingredients. The key is to mix gently so the textures remain intact. Transfer the deliciously mixed salad to a serving plate. Your appetizing and refreshing King Oyster Mushroom and Whelk Spicy & Sour Salad is ready to be enjoyed! ♡
