Main Ingredients
  • 2/3 medium zucchini
  • 1/2 cup dried shrimp (using a paper cup as a measure)
  • 1 Tbsp cooking oil

Seasoning Ingredients
  • 1 Tbsp salted shrimp (or soy sauce/salt if unavailable)
  • 0.5 Tbsp perilla oil
  • 1 Tbsp sesame seeds
  • 0.5 Tbsp minced garlic

Cooking Instructions

Step 1

First, prepare the zucchini and dried shrimp for cooking. Wash the zucchini thoroughly under running water and pat it dry. For the dried shrimp, gently shake off any debris.

Step 2

Slice the zucchini into half-moon shapes, about 0.5 cm thick. It’s best to keep them at a moderate thickness; slicing them too thin might cause them to break apart during stir-frying.

Step 3

Heat 1 tablespoon of cooking oil in a pan over medium-low heat. Add 0.5 tablespoon of minced garlic and stir-fry until fragrant, being careful not to burn it. Once the garlic is aromatic, add the sliced zucchini and stir-fry until it becomes slightly translucent.

Step 4

Once the zucchini is partially cooked, add the prepared dried shrimp and continue to stir-fry together. The dried shrimp will release a nutty aroma as they cook in the oil.

Step 5

Now it’s time to season the dish. Add 1 tablespoon of salted shrimp and stir-fry to ensure it’s well distributed among the zucchini and shrimp. If you don’t have salted shrimp, you can adjust the seasoning with soy sauce or salt to your preference. However, be mindful of the saltiness of salted shrimp and taste as you go, rather than adding too much at once.

Step 6

After adding the salted shrimp, drizzle in 0.5 tablespoon of perilla oil and stir-fry briefly. The nutty fragrance of the perilla oil will further enhance the flavor of the dish.

Step 7

Just before turning off the heat, generously sprinkle in 1 tablespoon of sesame seeds for added nuttiness and give it a final gentle mix. Your delicious stir-fried zucchini with dried shrimp is now complete! Serve it over warm rice for a delightful meal.
