Chewy and Delicious Stir-Fried Pork Rinds
Pork Rind (or Pork Skin) Dish / Marinated Pork Rinds

Main Ingredients
- 100g pork rinds
- 1/4 onion
- 1 Cheongyang chili pepper (or other spicy green chili)
- 1 red chili pepper
Seasoning
- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 2 Tbsp soy sauce
- 2 Tbsp sugar
- 1 Tbsp corn syrup or rice syrup
- 1 pinch black pepper
- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 2 Tbsp soy sauce
- 2 Tbsp sugar
- 1 Tbsp corn syrup or rice syrup
- 1 pinch black pepper
Cooking Instructions
Step 1
To remove any gamey smell and tenderize the pork rinds, boil them in water for about 20 minutes with black pepper, soju (Korean rice wine), and bay leaves. This process will make the pork rinds delightfully chewy yet tender.
Step 2
After boiling, rinse the pork rinds under cold running water. Carefully trim off any remaining fat or fatty bits attached to the skin with a knife. Thoroughly cleaning them will result in a cleaner and more delicious marinated dish.
Step 3
Once cleaned, cut the pork rinds into bite-sized pieces. Cutting them too small might diminish the chewy texture, so it’s recommended to cut them into pieces that are easy to eat in one bite, or slightly elongated strips.
Step 4
Peel and wash the onion, then slice it thinly into strips. The sliced onion will add a refreshing, crisp texture when mixed with the pork rinds.
Step 5
Remove the stems from the Cheongyang chili pepper and red chili pepper, wash them, and then finely chop them. Removing the seeds and chopping them will add a spicy kick and vibrant color to the dish. If you enjoy more heat, feel free to adjust the amount of Cheongyang chili pepper or leave the seeds in.
Step 6
Now, place all the prepared ingredients – the cleaned pork rinds, sliced onion, and chopped chili peppers – into a large bowl. This is where we gather everything to mix with the seasoning.
Step 7
Finally, add the seasoning ingredients to the bowl: 2 Tbsp gochujang, 2 Tbsp gochugaru, 1 Tbsp minced garlic, 2 Tbsp soy sauce, 2 Tbsp sugar, 1 Tbsp corn syrup, and a pinch of black pepper. Mix everything thoroughly with your hands until the seasoning is evenly distributed. It’s important to mix well for the flavors to meld beautifully. Feel free to adjust the seasoning to your taste.
