Easy and Quick Nutritious Dried Shiitake Mushroom Stir-Fry
This is a delicious dried shiitake mushroom stir-fry with a wonderfully chewy texture and deep flavor. The savory notes from soy sauce and oyster sauce make it a perfect side dish for rice or an impressive appetizer for guests. It’s also packed with nutrients, making it great for children!
Ingredients
- 1 handful dried shiitake mushrooms (approx. 30-40g)
- 1/2 onion (sliced)
- A little carrot (thinly julienned)
- 1 Cheongyang chili pepper (seeds removed and finely chopped, adjust spiciness as needed)
Seasoning
- 2 Tbsp soy sauce or seasoned soy sauce
- 1 tsp oyster sauce
- 1/2 Tbsp minced garlic
- A pinch of sesame seeds
- A pinch of black pepper

Cooking Instructions
Step 1
First, soak the dried shiitake mushrooms in lukewarm water for about 30 minutes until fully rehydrated. Rinse the rehydrated mushrooms thoroughly under running water to remove any debris, then squeeze out excess water by hand. You can trim or remove the tough stems if desired. (Tip: You can use the mushroom soaking water as a broth!)
Step 2
Prepare the sliced onion, thinly julienned carrot, and finely chopped Cheongyang chili pepper. If you prefer spicy food, you can leave the seeds in the chili pepper, or adjust the amount if serving to children or those who don’t like spicy food.
Step 3
In a large pan, combine the rehydrated dried shiitake mushrooms, sliced onion, julienned carrot, and chopped chili pepper. Add the seasoning ingredients: soy sauce, oyster sauce, and black pepper. Gently mix everything together with your hands to ensure the seasoning is evenly distributed.
Step 4
Add about 1-2 tablespoons of cooking oil to the pan. Stir-fry over medium-low heat, allowing the seasoning to gradually penetrate the ingredients. Cooking over low heat from the start prevents the mushrooms from burning and helps them absorb the flavors deeply.
Step 5
Once the mushrooms and vegetables have softened slightly and the sauce has begun to thicken, add the minced garlic. Continue to stir-fry for another 1-2 minutes until the garlic is fragrant, which will further enhance the flavor.
Step 6
Finally, sprinkle with sesame seeds. Stir-fry briefly for another moment until the sesame seeds are fragrant. Turn off the heat and serve attractively on a plate. Your delicious dried shiitake mushroom stir-fry is ready!
