Ingredients
  • Dried radish strips (Mool-maeng-ee) 2 cups (approx. 2 handfuls after soaking)
  • Soy sauce 4 Tbsp
  • Gochugaru (Korean chili flakes) 3 Tbsp
  • Minced garlic 1 Tbsp
  • Plum extract 1 Tbsp
  • Oligosaccharide (or corn syrup) 2 Tbsp
  • Sesame oil 1 Tbsp
  • Toasted sesame seeds 1 Tbsp
  • Green onion 1 stalk (use both white and green parts)

Cooking Instructions

Step 1

Place the 2 cups of dried radish strips in a large bowl. Pour enough water to cover them completely and let them soak for at least 40 minutes. Soaking softens the radish, allowing it to absorb seasonings better and improve its texture.

Step 2

After soaking, wash the dried radish strips by rubbing them vigorously with your hands, much like washing laundry. This step helps remove any dirt or impurities from the radish.

Step 3

Rinse them several times in fresh water, then drain thoroughly in a colander, squeezing out as much water as possible. Properly draining the excess water prevents the salad from becoming soggy and ensures the seasoning adheres well.

Step 4

In a separate bowl, combine the drained dried radish (about 2 handfuls) with 4 Tbsp of soy sauce. Gently mix to allow the soy sauce to begin penetrating the radish. Let it sit for a moment.

Step 5

Now, add the remaining seasoning ingredients. Prepare 3 Tbsp of gochugaru, 1 Tbsp of minced garlic, 1 Tbsp of plum extract, 2 Tbsp of oligosaccharide, 1 Tbsp of sesame oil, and 1 Tbsp of toasted sesame seeds. Finely chop the white parts of the green onion (1 stalk) and add them to the bowl.

Step 6

Thoroughly mix and knead the radish with the seasonings using your hands. It’s important to mix vigorously to ensure the seasoning is evenly distributed and well-absorbed. Kneading it well really brings out the flavor!

Step 7

Finally, finely chop the green parts of the green onion and add them to the salad. Give it one last gentle mix to combine. Your delicious dried radish salad is ready! The green onions add color and aroma. It’s delicious to eat right away, or you can store it in the refrigerator to enjoy an even deeper flavor over time.
