Acorn Jelly Ingredients
  • 2 cups acorn powder
  • 12 cups water
  • 1/2 tbsp salt
  • 1 tbsp sesame oil

Seasoning Sauce
  • 1 tbsp soy sauce
  • 1/2 tbsp red pepper flakes (gochugaru)
  • 1/2 tbsp sesame oil
  • 1/3 tbsp sugar
  • 1/5 tbsp minced garlic (a pinch)
  • A little chopped green onion
  • A little toasted sesame seeds

Cooking Instructions

Step 1

In a wide pot, pour 12 cups of cold water. Sift in 2 cups of acorn powder while whisking continuously to prevent lumps. (The general ratio is 1 cup acorn powder to 6 cups water). Add 1/2 tbsp of salt to season the mixture.

Step 2

Place the pot over high heat. It’s crucial to continuously stir in one direction with a wooden spoon or spatula, scraping the bottom of the pot to prevent sticking. Stir gently as it begins to thicken and heat up.

Step 3

As the mixture starts to thicken and bubble, which usually happens within 5 minutes, reduce the heat to medium or low. Continue stirring to prevent burning or sticking to the bottom of the pot.

Step 4

Once the acorn jelly mixture has reached your desired consistency and is cooked through, stir in 1 tbsp of sesame oil to add a nutty aroma. Then, immediately turn off the heat.

Step 5

Carefully pour the warm acorn jelly mixture into a clean stainless steel or glass container. Allow it to cool completely at room temperature for at least 4 hours. Do not cover it tightly while it’s cooling, or let it cool slowly at room temperature rather than in the refrigerator for a softer texture.

Step 6

Once the acorn jelly is fully set, cut it into bite-sized pieces (about 1 cm thick). Mix all the ingredients for the seasoning sauce together. Drizzle the sauce over the cut acorn jelly or serve it on the side. Enjoy your delicious homemade acorn jelly!
