Main Ingredients
- 130g Cheonggukjang (fermented soybean paste)
- 50g Radish
- 1/4 Onion
- 2 Shiitake mushrooms
- 700ml Rice water (water from rinsing rice)
- 1 Broth cube (e.g., chicken stock cube, anchovy sachet)
- 1/2 block Firm Tofu
- 1/4 Green onion
- 85g Kimchi
Cooking Instructions
Step 1
Prepare all your ingredients before you start cooking. Dice the firm tofu into small, bite-sized cubes (about 1.5cm). Chop the kimchi into manageable pieces. Slice the onion into thick strips. Thinly slice the radish into half-moon shapes. Remove the stems from the shiitake mushrooms and slice them thinly. Chop the green onion diagonally.
Step 2
To enhance the depth of flavor in your Cheonggukjang stew, prepare 700ml of rice water. The milky water from rinsing rice will add a smoother texture to the stew.
Step 3
In a deep pot, add the prepared rice water. Then, add the sliced radish and the broth cube (such as chicken stock or an anchovy sachet). Bring this mixture to a boil over high heat. The broth cube will add a richer flavor to the stew, so be sure to include it.
Step 4
Once the broth is boiling vigorously, add the chopped kimchi and the Cheonggukjang. Add the Cheonggukjang in its clumped form, and gently break it apart with a ladle or spatula as it simmers in the broth. Continue to boil for about 2-3 minutes until the fragrant aroma of Cheonggukjang rises.

As the stew begins to boil again, add the diagonally cut green onion, sliced onion, and shiitake mushrooms. Stir in 1 tablespoon of minced garlic for added flavor and aroma. Let it simmer for another 3-4 minutes to allow the ingredients to meld together.

Now it’s time to season the Cheonggukjang stew. Taste the broth and, if it needs more saltiness, add 1 tablespoon of Doenjang to adjust the flavor. Be careful not to add too much Doenjang, as it can overpower the original taste of Cheonggukjang. Add it gradually while tasting to achieve the perfect balance.
Step 7
