This buttery egg fried rice was inspired by childhood memories of my favorite egg fried rice. Back then, we used margarine, and it tasted amazing! I decided to try using butter for a richer flavor, and while it’s delicious in its own right, it doesn’t quite capture that nostalgic taste for me. Perhaps my palate just misses the old flavors! Regardless, it’s a familiar and comforting dish that’s hard not to enjoy. It might not be exactly like the taste of my childhood, but it’s a simple and satisfying meal that anyone can easily make. Ingredients
- 1 bowl of warm cooked rice
- 2 fresh eggs
Seasoning & Aromatics
- Pinch of salt, to taste
- 1-2 Tbsp butter
- 1-2 Tbsp minced green onions (optional, for added aroma)

Cooking Instructions
Step 1
In a bowl, combine the warm cooked rice and the two fresh eggs. Mix them together thoroughly. This helps prevent the rice from clumping during cooking and coats each grain with egg, resulting in a softer fried rice.
Step 2
Melt 1-2 tablespoons of butter in a non-stick pan over medium heat. Swirl the pan to ensure the butter coats the entire surface and be careful not to let it burn.
Step 3
Once the butter is melted, add the minced green onions (if using) and sauté for about 30 seconds until fragrant. Sautéing the green onions brings out their wonderful aroma and flavor. If you don’t like green onions or don’t have any, feel free to skip this step.
Step 4
Add the rice and egg mixture to the pan. Begin to stir-fry, using a spatula to gently break up any clumps and ensure the rice is evenly cooked. As the eggs cook, they will coat the rice grains, creating a fluffy texture.
Step 5
Once the rice is cooked and has a fluffy texture, season it with a pinch of salt to your liking. It’s best to add salt gradually and taste as you go to avoid over-salting. Adjust the seasoning until it’s just right.
Step 6
