  • 1 pack Green Chili Peppers (approx. 100g)

Cooking Instructions

Step 1

Drain all the liquid from the canned saury using a sieve. It’s best to handle the saury gently to prevent it from breaking apart.

Step 2

Trim the stems off the green chili peppers, wash them thoroughly under running water, and pat them dry. If they are large, cut them in half. If you prefer a spicier taste, you can remove some of the seeds.

Step 3

Place the drained canned saury in a wide, shallow pot in an appealing arrangement. Pour in 60ml soy sauce, 60ml mirin, and 60ml water. This ensures the sauce evenly coats the saury.

Step 4

Sprinkle 1.5 Tbsp sugar evenly over the saury. Sugar enhances the umami flavor and gives the dish a nice sheen.

Step 5

Add 2 Tbsp of ginger syrup. Ginger syrup helps to remove any fishy odors and adds a pleasant aroma. If you don’t have ginger syrup, you can substitute with 1/2 tsp minced ginger and 1 Tbsp honey.

Now, place the pot over medium heat and bring it to a boil. Once boiling, reduce the heat to low and simmer gently for about 5-7 minutes, basting the saury with the sauce occasionally so the flavors meld.

When the sauce has reduced slightly, arrange the prepared green chili peppers among the saury pieces in the pot. The chili peppers will cook in the sauce, absorbing its delicious flavor.

Step 8

Reduce the heat to low and continue to simmer, either with the lid on or off, for another 5-8 minutes, or until the green chili peppers are tender and the sauce is well combined with the saury. It’s important to simmer until the chili peppers wilt and their color becomes vibrant.

Once the green chili peppers are fully cooked, turn off the heat. Finally, drizzle 1 Tbsp of cooking oil around the edges of the pan. This will add a beautiful gloss to the braised dish, making it even more appetizing.
