Step 1
Begin by preparing all the ingredients for your braised croaker. Ensure the dried radish greens are rehydrated and tender before you start.

Now, let’s prepare the croaker fish. Hold your knife at a slant and carefully scrape off the scales from the body of the fish. Be mindful as the scales can sometimes jump, so scrape them off thoroughly.
