  • 3 ripe bananas
  • 2 Tbsp shredded coconut (optional)
  • 3 fresh eggs
  • 1/2 cup fresh blueberries (optional)
  • 2 Tbsp maple syrup (for serving)
  • A little unsalted butter (for greasing the pan)
  • A pinch of powdered sugar (for dusting, optional)

Cooking Instructions

Step 1

First, take 3 ripe bananas and peel them. Place them in a bowl and use a fork or a mashing tool to mash them thoroughly until they form a smooth puree with no lumps. Ensuring there are no lumps is key to achieving a fluffy texture.

Step 2

To the mashed banana puree, add 2 tablespoons of shredded coconut and mix well. Shredded coconut is optional, but it adds a wonderful flavor and texture. If you’re not a fan of coconut flavor, feel free to omit it.

Step 3

Now, crack 3 fresh eggs into the banana and coconut mixture. Eggs are essential for binding the batter and helping the pancakes rise.

Step 4

Using a whisk or spatula, stir all the ingredients in the bowl until they are well combined and form a smooth, consistent batter. Don’t overmix; just ensure everything is incorporated.

Step 5

Gently fold in 1/2 cup of fresh blueberries into the prepared batter. Blueberries add a burst of fruity flavor and a beautiful color to the pancakes. If you don’t have blueberries, other berries or omitting them is perfectly fine.

Step 6

Heat a non-stick pan over medium-low heat and lightly grease it with a little unsalted butter. Pour a moderate amount of batter onto the pan to form each pancake. Cook gently over low heat. Once the edges start to set and bubbles appear on the surface, it’s time to flip.

Step 7

Carefully flip the pancake once the first side is golden brown and cook the other side until equally golden. Your delicious pancakes are ready when both sides are beautifully browned!
