- 100g fresh Choonamul (Korean Pimpinella brachycarpa)
Seasoning
- 1 tsp Doenjang (Korean soybean paste)
- 1-2 drops Guk-ganjang (Korean soup soy sauce) (adjust to taste)
- 1/2 tsp minced garlic
- 1/2 tbsp roasted sesame seeds
- A drizzle of sesame oil

Cooking Instructions
Step 1
First, prepare the fresh Choonamul by washing it thoroughly. Trim off any wilted or tough parts.

After washing, cut the Choonamul into bite-sized pieces, about 3-4 cm long. This makes it easier to eat.

Bring a pot of water to a rolling boil. Once boiling, carefully add the prepared Choonamul and blanch for exactly 20 seconds. Be cautious not to overcook, as it can become mushy and lose its crisp texture!

Immediately after blanching, transfer the Choonamul to a bowl of cold water to quickly cool it down. This step helps to retain its vibrant green color and maintain a refreshing crunch.
Step 5
Gently squeeze out any excess water from the cooled Choonamul and place it in a mixing bowl. Add all the seasoning ingredients except for the sesame oil: Doenjang, Guk-ganjang, minced garlic, and roasted sesame seeds.

Gently mix everything together with your hands, tossing the greens until they are well coated with the seasoning. Taste and adjust the seasoning if needed. Finish by drizzling in the sesame oil for a fragrant aroma. Your delicious seasoned Choonamul is ready!
