Main Ingredients
  • 1 bunch of fresh wild chives (including roots)
  • 1 spicy Cheongyang chili pepper

Special Wild Chive Sauce
  • 4 Tbsp Soy Sauce
  • 1 Tbsp Fish Sauce (for added umami!)
  • 2 Tbsp Fine Chili Powder
  • 1 Tbsp Fresh Sesame Oil
  • 4 Tbsp Water (optional, if you prefer it less salty)

Cooking Instructions

Step 1

When you buy wild chives, they are usually tied with a rubber band. It’s best to leave them tied until you’re ready to prepare them, as this makes them easier to handle without falling apart.

Step 2

Carefully peel off the outer skin covered in soil from the root part of the wild chives. Also, remove any clumps of soil or hard bits found at the very tip of the roots.

Step 3

Rinse the root parts thoroughly under running water multiple times to wash away all the soil. It’s important to wash them meticulously until all the dirt is gone.

Step 4

After cleaning the roots, discard the rubber band and wash the stem parts carefully to ensure there are no impurities.

Step 5

Finely chop the cleaned wild chives into pieces about 0.5 to 1 cm in length. Mince the bulbous root parts finely so they blend harmoniously into the sauce.

Step 6

Now, let’s make the special wild chive sauce. In a bowl, combine 4 Tbsp soy sauce, 1 Tbsp fish sauce, 2 Tbsp fine chili powder, and 1 Tbsp fresh sesame oil. If you find the sauce too salty, you can add 4 Tbsp of water to adjust the saltiness.

Step 7

Mix all the sauce ingredients together thoroughly with a spoon until the sauce is smooth and well combined, ensuring there are no lumps.

Step 8

If you enjoy a bit of heat, adding 1 chopped Cheongyang chili pepper will make it even spicier and more delicious. You can also sprinkle in some sesame seeds according to your preference.

Step 9

Once all the ingredients are mixed well, your delicious wild chive sauce is ready! It’s so tasty, you can just eat it mixed with rice.

The prepared wild chive sauce must be stored in the refrigerator. Even when refrigerated, to maintain its fresh taste and aroma, it’s recommended to consume it within a week.
