Aromatic Deodeok and Chive Jangtteok: A Delicacy Even Kids Love!
Deodeok and Chive Jangtteok that My Son Finished Before My Husband Got Home!
A special dish featuring deodeok (Korean root vegetable) and balloon flower root, known to be beneficial for children’s respiratory health and immunity! This Jangtteok, made with a batter incorporating finely blended deodeok, boasts a delicate deodeok aroma and a delightful sweet and spicy flavor. Crispy on the outside and moist on the inside, this delicious jangtteok is irresistible to all ages. I carefully prepared it for my husband and placed it on the table, but my son fell in love with it so much that he ate over half of it – 7 pieces! – before my husband even got home! While our plan for the whole family to enjoy it together was slightly disrupted by my son’s enthusiastic eating, it’s a testament to how captivating and delicious this deodeok and chive jangtteok is. Let’s make this unique deodeok dish that can delight your children’s taste buds and also take care of their health, not just for special occasions!
Jangtteok Ingredients
- Deodeok 50g (about 6 pieces the thickness of a finger)
- Squid 1/2 piece
- Gochujang (Korean red chili paste) 2 Tbsp
- Pancake mix 1.5 cups (1 and 1/2 cups)
- Chives about a handful (cut into 2cm lengths)
- Cooking oil adequate amount (be generous)
Cooking Instructions
Step 1
1. Prepare the Deodeok: The deodeok I bought was a bit smaller than the thickness of a finger. After removing the skins, soak them in lightly salted water for about 30 minutes to remove any bitterness. Rinse them lightly under running water and cut them into manageable pieces. Step 2
2. Make the Batter: Place the prepared deodeok and 1.5 cups of water into a blender and blend until very smooth and fine. Pour the blended deodeok into a large bowl and dissolve 2 Tbsp of gochujang completely, ensuring there are no lumps. 3. Add the finely chopped 1/2 piece of squid and the handful of chives cut into 2cm lengths. Finally, add 1.5 cups of pancake mix and stir everything well until a thick batter is formed. You can adjust the amount of pancake mix to achieve your desired batter consistency.
Step 3
4. Cook the Jangtteok: Heat a pan with a generous amount of cooking oil over medium-low heat. Once the pan is preheated, scoop the batter using a ladle or spoon and pour it onto the pan to form small pancakes. When the surface starts to turn golden brown, flip them over and cook the other side until golden brown as well. Cook both sides until nicely golden to complete your delicious Deodeok and Chive Jangtteok.
