It brings a delightful twist to everyday meals.
Main Ingredients
- 300g lotus root
- 1/4 carrot
- 1/2 onion
- 1/3 green bell pepper
Cooking Instructions
Step 1
Prepare the lotus root by washing it thoroughly. Slice it into uniform rounds about 1 cm thick. Aim for a consistent thickness to ensure even cooking and a pleasant, slightly firm texture.
Step 2
Peel the carrot and chop it into bite-sized pieces, similar in size to the lotus root slices. Peel the onion and cut it into quarters or thick slices. Remove the seeds from the green bell pepper and chop it into suitable pieces for both color and flavor.
Step 3
In a wide pot or pan, combine 2 cups of water, 3 tablespoons of curry powder, 1 tablespoon of soy sauce, and 1 tablespoon of sugar. Whisk well with a spoon or whisk until the sauce is smooth and lump-free, creating the braising liquid.
Step 4
Add the sliced lotus root to the prepared sauce. Bring it to a boil over medium-high heat. Once boiling, reduce the heat to medium and simmer for about 5 minutes to soften the lotus root. Then, add the chopped carrot, onion, and green bell pepper to the pot and continue to cook together.
Step 5
Continue to simmer uncovered over medium heat, stirring occasionally, until the sauce thickens and coats all the ingredients evenly. This process allows the flavors to meld beautifully. Stir frequently to prevent sticking and achieve a glossy finish. Your aromatic curry lotus root is ready!
