All-Purpose Wild Chive Soy Sauce Seasoning

This is a versatile wild chive soy sauce seasoning that can be used with almost any dish. It’s fantastic as a sauce for pan-fried tofu, jelly (muk), bibimbap, various pancakes and savory crepes, or even as a topping for Janchi Guksu (Korean banquet noodles). Ingredients
- 80g fresh wild chives
- 8 Tbsp soy sauce
- 1 Tbsp sugar
- 1/2 Tbsp red pepper flakes (gochugaru)
- 1/2 Tbsp minced garlic
- 1/2 Tbsp sesame oil
- 1/2 Tbsp sesame seeds
Cooking Instructions
Step 1
– Prepare the Ingredients: First, thoroughly wash the wild chives. Gently rinse them under running water, paying attention to the roots to remove any dirt or debris. Lightly pat them dry and then chop them into approximately 3cm lengths for easy eating.
Step 2
– Create the Seasoning Base: In a mixing bowl, combine all the seasoning ingredients except for the wild chives: soy sauce, sugar, red pepper flakes, minced garlic, sesame oil, and sesame seeds.
**Tip:** If you prefer a sweeter taste or a deeper flavor, you can substitute the sugar with 1 Tbsp of plum extract (maesilcheong). Alternatively, you can add an extra half tablespoon of sugar to adjust the sweetness to your liking.
Step 3
– Mix and Add Chives: Using a spoon or whisk, stir the ingredients in the bowl until the sugar is completely dissolved. Once the sugar is dissolved, add the chopped wild chives to the bowl. Gently mix everything together, ensuring the chives are evenly coated with the seasoning. Be careful not to mix too vigorously, as this can mash the chives.
