Today, I’m excited to share with you a ‘Versatile Seasoning Sauce for Korean Salads’ that’s a slightly modified version of the sauce used in my popular Crown Daisy Salad (freshly dressed) recipe. With this single sauce, you can make any of your fresh vegetable salads incredibly delicious! It works perfectly for Crown Daisy Salad, Lettuce Salad, Sea Purslane Salad, Spring Cabbage Salad, Water Parsley Salad, and many other raw vegetable preparations.

Making the All-Purpose Seasoning Sauce: First, in a mixing bowl, combine 3 tablespoons of soy sauce, 1/2 tablespoon of anchovy sauce (fish sauce), 2 tablespoons of vinegar for a tangy kick, 1/2 tablespoon of minced garlic for aromatic depth, 1.5 tablespoons of sugar for sweetness, 1 tablespoon of ground toasted sesame seeds for nutty flavor, 2 tablespoons of red pepper flakes (gochugaru) for a hint of spice, and finally, 2 tablespoons of sesame oil for its rich aroma. Stir all the ingredients thoroughly with a spatula or spoon until well combined to create the sauce. It’s best to chill the sauce in the refrigerator for a short while before use for a crisper flavor. ***Tip: Adjust the proportions of sugar, vinegar, and soy sauce to suit your personal taste preferences. This sauce is very forgiving!

***Making Crown Daisy and Chicory Salad: Now, let’s make a wonderful Crown Daisy and Chicory Salad using the all-purpose seasoning sauce we just prepared! First, wash the crown daisy and chicory thoroughly and then drain them well. Cut them into bite-sized pieces. It’s crucial to remove as much moisture as possible from the vegetables to ensure the sauce adheres well and the salad doesn’t become watery. Place the drained crown daisy and chicory in a bowl. Add a small amount of finely julienned onion and carrot. Drizzle in the prepared all-purpose seasoning sauce and gently toss everything together until well combined. This creates a delicious Crown Daisy and Chicory Salad. Remember to prepare your vegetables according to the amount of sauce you intend to use.

Then, drain it thoroughly using a sieve. Add a small amount of finely julienned onion and carrot to the bowl with the drained sea purslane. Pour in the prepared all-purpose seasoning sauce and gently mix until everything is evenly coated. This results in a crisp and flavorful Sea Purslane Salad. It’s important to adjust the amount of vegetables based on the quantity of dressing you have.

Adding perilla leaves (kkaennip) will enhance the aroma, so wash and cut them into manageable pieces too. Drain the lettuce and perilla leaves thoroughly using a sieve. Finely julienne a small amount of onion and carrot. Combine the prepared lettuce, perilla leaves, onion, and carrot in a bowl. Add the all-purpose seasoning sauce and gently toss to coat. This will give you a fresh and delicious Lettuce Salad.
