Ingredients (Measurements: Korean rice spoon)
- Canned corn kernels 195g
- Onion 2 Tbsp, finely minced
- Red bell pepper 2 Tbsp, finely minced
- Yellow bell pepper 2 Tbsp, finely minced
- Butter 15g
- Mayonnaise 3 Tbsp
- Mozzarella cheese (as much as desired)
- Black pepper, a pinch
- Parsley flakes, a sprinkle
Cooking Instructions
Step 1
Prepare the canned corn kernels. Since canned corn is already cooked, you can use it directly without any further cooking. Drain the corn thoroughly using a sieve to remove excess water. Leftover water can cause the kernels to clump or dilute the flavor.
Step 2
While bell peppers are optional, it’s highly recommended to include onion for enhanced flavor and texture. Finely mince the prepared onion and bell peppers. Place the minced vegetables in a bowl with the drained corn kernels.
Step 3
Add 3 tablespoons of mayonnaise and a pinch of black pepper to the corn and vegetable mixture. You can also add a little sugar or honey to taste, if you like.
Step 4
Using a spatula or spoon, mix all the ingredients thoroughly. It’s important to ensure the mayonnaise evenly coats the corn and vegetables for the best flavor integration.
Step 5
First, melt the butter. Place 15g of butter in an oven-safe dish or a microwave-safe bowl and microwave for about 30 seconds until melted. If the butter is not completely melted, continue microwaving in short 10-second intervals, being careful not to burn it.

Spread the melted butter evenly over the bottom of the oven-safe dish. Then, spread the corn and mayonnaise mixture evenly on top of the butter. Finally, generously sprinkle your desired amount of mozzarella cheese or pizza cheese over the corn mixture. Feel free to use your favorite type of cheese and adjust the quantity to your liking.
Step 7
Finish by sprinkling parsley flakes over the cheese for a touch of color. Place the dish in an air fryer preheated to 180°C (350°F) and cook for approximately 8 minutes. Cook until the cheese is golden brown and melted, and the corn is heated through. Cooking time may vary slightly depending on your air fryer model.
