When vegetables are skyrocketing in price, make a delicious side dish by washing and stir-frying aged cabbage kimchi you have at home! This dish brings out the deep flavor and crisp texture of aged kimchi, making it a perfect companion for rice. It’s also quick to prepare, ideal for busy days.
Main Ingredients
- 2 pieces of aged cabbage kimchi
- 1/2 stalk of green onion
Seasoning Ingredients
- 2-3 Tbsp sunflower oil
- 1-2 Tbsp soy sauce
- 1 tsp minced garlic
- 1-2 Tbsp corn syrup (or oligosaccharide)
- 1 tsp sesame oil
- A pinch of sesame seeds

Cooking Instructions
Step 1
Rinse the aged cabbage kimchi thoroughly under running water. Gently remove the outer leaves and cut the kimchi into bite-sized pieces, about 3-4 cm long. It’s important to wash it well to reduce excess saltiness.
Step 2
Wash the green onion, trim the root end, and thinly slice it crosswise. If you prefer a spicier dish, finely mince 1-2 Korean chili peppers (cheongyang peppers) at this stage. The chili peppers are optional.
Step 3
In a bowl, combine the washed and cut kimchi with soy sauce, minced garlic, corn syrup, sesame oil, and sesame seeds. Gently mix well to ensure the seasoning is evenly distributed. Adjust the amount of soy sauce and corn syrup based on the saltiness and tanginess of your aged kimchi. Taste and adjust as needed.
Step 4
Heat a pan over medium-high heat and add the sunflower oil. Add the seasoned kimchi and stir-fry for about 4-5 minutes until it becomes slightly translucent and tender. Then, add the sliced green onions and continue to stir-fry for another 1-2 minutes until the green onions are fragrant.
Step 5
Just before turning off the heat, drizzle in the sesame oil and sprinkle with sesame seeds to finish. Serve the aged kimchi stir-fry warm as a delicious side dish.
