A Wholesome Dish Your Body Will Love: Tomato Turmeric Rice
This special healthy rice dish is made using precious turmeric powder, lovingly grown and sent by my youngest brother from Haenam. We’ve added plenty of fresh tomatoes to create a unique and flavorful experience. Enjoy the aromatic notes of turmeric combined with the bright tanginess of tomatoes for a delightful meal the whole family can savor. Main Ingredients
- 1 bowl of warm cooked rice
- 2 medium potatoes
- 1/3 carrot
- 1/2 ripe tomato
- 100g pork (for curry or ground pork)
- 1/2 onion
- 3 Korean green chili peppers (kkwari-gochu)
- 2 mini bell peppers (using different colors makes it more appealing)
- A handful of peas (frozen or canned)
- 1/2 Tbsp minced garlic
Cooking Instructions
Step 1
First, prepare all your ingredients by chopping them into bite-sized pieces, about 1.5cm cubes. It’s best to cut potatoes, carrots, onions, and mini bell peppers to a similar size so they cook evenly. You can remove the seeds from the tomato before dicing, or include them if you prefer.
Step 2
Heat a deep pot or pan over medium-low heat and add 2 tablespoons of cooking oil. Sauté the minced garlic first for about 1 minute until fragrant, being careful not to burn it. This step infuses the oil with a wonderful garlic aroma, enhancing the overall flavor.
Step 3
Add the pork to the pot and cook until it’s no longer pink. Then, add the diced potatoes, onions, carrots, mini bell peppers, and peas. Stir-fry everything together for 2-3 minutes until the vegetables begin to soften slightly and are well combined with the pork.
Step 4
Lightly season the mixture with herb salt (or regular salt and pepper). Now, add the diced tomatoes. Pour in 3 cups of water, enough to almost cover the ingredients. Bring the mixture to a boil over high heat, then reduce to medium-low, cover, and simmer for about 10-15 minutes, or until the potatoes and carrots are tender.
Step 5
In a separate bowl, combine the 3 tablespoons of turmeric powder and 2 tablespoons of starch with about 1/2 cup of water. Whisk until smooth and lump-free. Gradually pour this mixture into the simmering pot while stirring continuously. Continue to cook until the sauce thickens to your desired consistency. Finally, add the Korean green chili peppers (whole or halved) and cook for another 1-2 minutes to retain their vibrant color and a slight crunch.
Step 6
