How to Make Noodle Tteokbokki with Curry (Beat the Quarantine Blues!)

Curry is a flavor loved by everyone, young and old! The combination of curry and tteokbokki is fantastic, and I’ve used noodle tteok to give it a unique twist. With more time spent at home, why not create a special tteokbokki dish?

Main Ingredients
  • 250g Noodle tteokbokki rice cakes
  • 1 handful Bean sprouts
  • 40g Vienna sausages, sliced
  • 1/2 Onion, thinly sliced

Cooking Instructions

Step 1

First, prepare the vegetables and sausages for the dish. Slice the onion thinly and make shallow cuts in the Vienna sausages or slice them into bite-sized pieces. Rinse the bean sprouts thoroughly and drain them well.

Step 2

Blanch the noodle tteokbokki rice cakes in boiling water for about 1-2 minutes until they become soft. Be careful not to overcook them, as they might become mushy. Rinsing them in cold water after blanching can help maintain a chewier texture. (You can do this simultaneously while making the sauce to save time!)

Step 3

Heat a little cooking oil in a pan over medium heat. Add the minced garlic and stir-fry until fragrant. Be careful not to burn the garlic. Once aromatic, add the sliced onions and sauté until they become translucent.

Step 4

When the onions are softened, add the sliced Vienna sausages and stir-fry them together. Cook until the sausages are lightly browned and well combined with the onions for enhanced flavor.

Step 5

Once the ingredients are sufficiently sautéed, it’s time to make the curry sauce. Pour 200ml of water and 200ml of milk into the pan. Adding milk will make the curry sauce smoother and richer in flavor.

Step 6

Add 3 tablespoons of curry powder and stir well to ensure there are no lumps. Continue stirring over medium-low heat until the curry powder is completely dissolved.

Step 7

When the sauce begins to boil, add 1 teaspoon of oyster sauce to enhance the umami. Oyster sauce is a secret ingredient that elevates the overall taste of the tteokbokki.

Step 8

Now, add the blanched noodle tteok to the curry sauce and simmer together for about 2-3 minutes. Stirring occasionally is important to ensure the rice cakes absorb the curry sauce thoroughly.

Step 9

Finally, add the cleaned bean sprouts and cook for just a little longer. Bean sprouts lose their crispiness when overcooked, so only cook them until they are slightly wilted.

Step 10

Turn off the heat when the sauce has thickened to your desired consistency. If it’s too thick, you can add a little more water or milk to adjust the consistency.

Step 11

Arrange the finished curry tteokbokki attractively in a bowl. Top with the halved hard-boiled egg and a sprinkle of parsley flakes for a visually appealing and delicious unique curry tteokbokki! Enjoy it as a hearty meal or a special snack.
