Tigre Batter Ingredients
- 130g Almond Flour
- 30g Cake Flour
- 150g Egg Whites (room temperature)
- 80g Sugar
- 20g Sweetened Condensed Milk (or corn syrup)
- 150g Unsalted Butter
- 2g Baking Powder
- 60g Dark Couverture Chocolate (finely chopped)
Cooking Instructions
Step 1
Hello everyone! Today, we’re going to make a very special and cute ‘Tigre’. These baked goods, resembling tiger stripes, are fun to make. This recipe is based on 6 Tigres using Silikomart oval silicone molds. First, please prepare all the necessary ingredients!
Step 2
Let’s make the ‘brown butter’ which will add a wonderful flavor to the Tigre batter. Place 150g of unsalted butter in a frying pan and slowly melt it over low to medium-low heat. Be careful not to let it burn, just let it simmer.
Step 3
As the butter melts and starts to bubble, it will begin to turn brown. After about 5 minutes, it will be boiling and turning brown like in the photo. From this point on, watch it more carefully. Continue to cook until it turns a deep brown color.
Step 4
After simmering for about 10 minutes in total, the butter will transform into this appetizing deep brown color! Your delicious brown butter is ready. Turn off the heat and let the butter cool sufficiently. Do not add hot butter to the batter!
Step 5
While the butter is cooling, let’s prepare the base for the Tigre batter. In a mixing bowl, combine 150g of egg whites and 80g of sugar. Whisk them together thoroughly until evenly mixed. During this time, preheat your oven to 170°C (340°F). (Preheating time: about 20 minutes)
Step 6
Once the egg whites and sugar are well combined, add 20g of sweetened condensed milk and mix again until smooth. If you don’t have sweetened condensed milk, you can use corn syrup. (Tip: Sweetened condensed milk adds a subtle sweetness and moisture to the batter!)
Step 7
Whisking thoroughly will create a clear and smooth foamy mixture, as shown in the photo. Be careful not to over-whisk; mix just enough to blend the ingredients well. The mixture should become smooth and slightly frothy.
Step 8
Now it’s time to sift in the dry ingredients. Sift 130g of almond flour, 30g of cake flour, and 2g of baking powder through a fine-mesh sieve into the batter. It’s important to sift them finely to avoid lumps.
Step 9
After adding the sifted dry ingredients, use a rubber spatula to gently fold them in until no dry flour streaks remain. Avoid overmixing, as it can develop gluten and result in a tough texture. Mix just until the dry ingredients are incorporated. The batter should come together into a cohesive mass like this.
Step 10
Pour all of the browned butter, which you made and cooled earlier, into the batter after straining it through a fine sieve. Straining removes any burnt bits, ensuring a cleaner butter flavor. ★Important! Make sure the browned butter is sufficiently cooled before adding it to the batter. Adding hot butter will cook the egg whites!★

Once the browned butter is fully incorporated into the batter, finely chop 60g of dark couverture chocolate with a knife and add it all to the batter! (Tip: I deliberately chopped the chocolate slightly coarsely to preserve a satisfying bite when eating the Tigre. You can adjust this to your preference!)

After mixing in the chopped chocolate, your Tigre batter, which already smells of tiger energy, is complete! Transfer the finished batter into a piping bag. (Tip: If you don’t have a piping bag, you can use a zip-top bag with a corner snipped off.)
Step 13
Pipe the batter from the piping bag into the oval silicone molds, which are perfect for creating the Tigre shape. Fill each mold about 80-90% full, as shown in the photo. Overfilling can cause the batter to overflow during baking. Bake in the preheated 170°C (340°F) oven for 20 to 25 minutes. Baking time may vary depending on your oven.
Step 14
While the Tigres are baking, let’s make the ‘ganache filling’, the finishing touch for our Tigres! Pour 50ml of heavy cream into a frying pan over low heat and warm it until the edges just begin to bubble.
Step 15
Once the cream starts to simmer, turn off the heat and add 50g of dark couverture chocolate. Gently stir the chocolate until it’s completely melted by the heat of the cream. Mix them together well until smooth.
Step 16
Voilà! Your smooth and rich ganache filling is ready. It’s made so quickly! (Tip: This took about 5 minutes!) Let the finished ganache cool slightly, then transfer it to a piping bag.
Step 17
After baking for about 25 minutes, carefully remove the Tigres from the oven by inverting the oval silicone molds. Silicone molds make demolding incredibly easy, and the Tigres pop out perfectly shaped! (So convenient!) Transfer the baked Tigres to a wire rack and let them cool completely.
Step 18
Once the Tigres are fully cooled, generously fill the indentation in the center with the prepared ganache filling. Now it’s time to decorate them like tigers! I used ladyfingers for the ears and a chocolate deco pen for the eyes, nose, mouth, and cute stripes on the sides of the face. The ganache filling will become the tiger’s nose!

I also tried decorating them like tiger paw prints – aren’t they adorable? (Tip: If the ganache filling cools down too much, it can be difficult to pipe smoothly. It’s best to use it when it’s slightly lukewarm to get a smooth finish in the indentation.)
Step 20
With the ladyfinger ears added, your ‘real tiger Tigres’ are complete and look incredibly lifelike! The combination of sweet dark couverture chocolate and smooth ganache filling pairs wonderfully with a slightly bitter Americano. Of course, they are also delicious on their own! ^^
