Main Ingredients
  • Pork ribs 400g (cut into bite-sized pieces)
  • 1/2 onion (thinly sliced)
  • 1/2 green onion (sliced diagonally about 1cm thick)

Braising Sauce
  • Sugar 2.5 tsp
  • Anchovy extract sauce (or fish sauce) 2.5 tsp
  • Soy sauce 2.5 tsp
  • Mirin (rice wine) 0.5 tsp
  • Gochugaru (Korean chili flakes) 1.5 tsp
  • Minced garlic 1.5 tsp
  • Ketchup 1 tsp
  • Black pepper to taste
  • Salt 1 pinch

Cooking Instructions

Step 1

First, thinly slice the onion. Slice the green onion diagonally into about 1cm thick pieces.

Step 2

Gently rinse the pork ribs under cold water to remove any blood. Then, cut them into bite-sized pieces. (Your butcher can often pre-cut them for convenience.)

Step 3

Heat a pan over medium heat. Place the pork ribs fat-side down in the pan. Sprinkle a pinch of salt on top. Let them cook undisturbed for 3 minutes. This step allows the fat to render and create a non-stick surface, contributing to the tenderness of the meat.

Step 4

Reduce the heat to low. Flip the pork ribs. Now, combine all the braising sauce ingredients (Sugar 2.5 tsp, Mirin 0.5 tsp, Soy sauce 2.5 tsp, Anchovy extract sauce 2.5 tsp) and pour them into the pan. Mix well with the pork ribs.

Step 5

Once the sauce starts to bubble, add the Gochugaru (Korean chili flakes) 1.5 tsp. Stir well to ensure the chili flakes are evenly incorporated without clumps. This adds depth and a mild spice to the sauce.

Step 6

Add the sliced onions and green onions to the pan. Mix them gently with the ribs and sauce.

Step 7

Stir in the minced garlic (1.5 tsp). The garlic helps to remove any pork odor and enhances the overall flavor profile.

Step 8

Add the ketchup (1 tsp) and mix thoroughly. The ketchup adds a subtle tanginess and sweetness, balancing the flavors of the sauce.

Step 9

Increase the heat to high and stir-fry everything for 3 minutes. This step helps the sauce to coat the meat nicely and develop a richer flavor.

Step 10

Pour in 250ml of water. Sprinkle generously with black pepper. Cover the pan with a lid and reduce the heat to low. Let it braise gently for 40 minutes. This slow cooking process ensures the pork ribs become incredibly tender and absorb all the delicious flavors.

Step 11

After 40 minutes, check the consistency of the sauce. If there is too much liquid remaining, remove the lid and increase the heat to high to reduce the sauce to your desired thickness. Serve hot and enjoy this delightful dish!
