Main Ingredients
  • 300g thinly sliced beef (for shabu-shabu)
  • 14 tteokbokki rice cakes
  • 3 tbsp thinly sliced perilla leaves (kkaennip)
  • 1 tbsp minced pine nuts

Tteok Seasoning
  • 1 Tbsp soy sauce
  • 1/2 Tbsp sugar
  • A pinch of sesame oil

Braising Sauce
  • 2 Tbsp soy sauce
  • 2 Tbsp water
  • 1 Tbsp sugar
  • 1 Tbsp corn syrup (mulyeot)
  • 1/3 Tbsp sesame oil
  • A pinch of black pepper

Cooking Instructions

Step 1

First, lightly rinse the tteokbokki rice cakes under running water. Then, blanch them in boiling water for about 30 seconds. Be careful not to overcook them until they become too soft. Drain the blanched rice cakes in a colander.

Step 2

Place the blanched rice cakes in a bowl. Add the ‘Tteok Seasoning’ ingredients (1 Tbsp soy sauce, 1/2 Tbsp sugar, a pinch of sesame oil) and mix well to coat each rice cake evenly. Gently toss them to ensure the seasoning is absorbed for enhanced flavor.

Step 3

Take a thin slice of beef (for shabu-shabu) and lay it flat. Place a seasoned tteokbokki rice cake onto the beef and roll it up tightly, similar to making a sushi roll. Ensure the ends are tucked in to prevent the rice cake from unraveling.

Step 4

Heat a pan over medium heat. Add all the ‘Braising Sauce’ ingredients (2 Tbsp soy sauce, 2 Tbsp water, 1 Tbsp sugar, 1 Tbsp corn syrup, 1/3 Tbsp sesame oil, a pinch of black pepper) and bring to a simmer. Once the sauce is boiling, carefully add the beef-wrapped rice cakes. Braise them, turning occasionally, until the sauce thickens and coats the rolls with a glossy sheen.

Step 5

Arrange the thinly sliced perilla leaves attractively on the bottom of a serving dish. Nicely place the braised beef-wrapped tteokbokki rolls on top of the perilla leaves.

Step 6

Finally, sprinkle the minced pine nuts over the dish for a nutty aroma and delightful finish. Your delicious Beef-Wrapped Tteokbokki is ready to be enjoyed warm!
