On days when a sophisticated appetizer is calling your name, these pan-fried beef patties are the perfect answer! They make an excellent dish for entertaining guests. The dipping sauce served alongside is particularly delightful; be sure to try it together.
For the Beef Jeon- 500g thinly sliced beef for Jeon
- 2 Tbsp soy sauce
- 2 Tbsp clear rice wine (cheongju or mirin)
- 1 Tbsp sesame oil
- 1/2 Tbsp finely minced ginger
- 3 large eggs
- 1 large egg yolk
- 1.3 cups glutinous rice flour (approx. 150g)
For the Dipping Sauce- 1 Tbsp soy sauce
- 2 Tbsp sugar
- 1 Tbsp lime juice or lemon juice
- 1/2 Tbsp minced garlic
- 1 Tbsp soy sauce

Cooking Instructions
Step 1
First, prepare the marinade for the beef. In a bowl, combine 2 tablespoons of soy sauce, 2 tablespoons of clear rice wine (cheongju or mirin), 1 tablespoon of sesame oil, and 1/2 tablespoon of finely minced ginger. Mix well.

Add the beef slices to the marinade and gently coat them. Let it marinate for about 20 to 30 minutes. If you’re using high-quality beef, you don’t need to marinate it for too long; it will still be juicy and delicious.

Now, let’s prepare the coating for the Jeon. In a separate bowl, whisk together 3 large eggs and 1 egg yolk. Adding an extra yolk will give the Jeon a richer color and a more tender texture.

In another shallow dish, prepare 1.3 cups of glutinous rice flour. You can substitute with all-purpose flour or a Korean pancake mix (buchim garu), but glutinous rice flour will give you a wonderfully crispy and nutty crust.

Time for assembly! Take a piece of marinated beef, gently shake off any excess marinade, and then coat it evenly with the glutinous rice flour on both sides. Aim for a thin, even layer of flour.

Next, dip the flour-coated beef into the whisked egg mixture, ensuring it’s fully coated. The egg wash will help the coating adhere nicely.

Heat a generous amount of cooking oil in a frying pan over medium heat. For an extra layer of flavor and aroma, you can add a single drop of sesame oil to the cooking oil. (Optional tip: mix 1 Tbsp cooking oil with 1 drop of sesame oil).

Carefully place the coated beef slices into the hot pan. Cook over medium-low heat, flipping once, until each side is beautifully golden brown. Keep an eye on the heat to prevent burning.
