Try making the incredibly popular Taiwanese Hong Rui Zhen sandwich right at home! We tried it recently for the first time and were amazed. Even though it uses simple ingredients, it’s significantly more delicious than typical convenience store sandwiches. The perfect blend of soft egg crepe, savory ham, and creamy cheese, enhanced by a sweet butter-condensed milk spread, makes this sandwich an ideal snack for kids or a delightful addition to your picnic basket.

Ingredients
  • 4 slices of bread
  • 2 eggs
  • 1 slice of cheddar cheese
  • 2 slices of ham
  • 2 Tbsp butter
  • 2 Tbsp condensed milk
  • 2 Tbsp mayonnaise

Cooking Instructions

Step 1

First, let’s prepare the special butter and condensed milk spread that adds wonderful flavor to our sandwich. Leave the butter at room temperature for about 1 hour until softened, then mix in 2 tablespoons of condensed milk until smooth.

Step 2

Whisk thoroughly until the butter and condensed milk are fully combined and creamy. This amount should be enough to make about 3 sandwiches (which uses 6 slices of bread).

Step 3

Next, we’ll make the egg crepe, which contributes to the sandwich’s delicate texture. Lightly beat 2 eggs in a bowl and cook them thinly in a non-stick pan to create 2 egg crepes. We won’t be adding any salt at this stage.

Step 4

Now it’s time to assemble the sandwich! Take 2 slices of bread and spread a thin, even layer of mayonnaise over each one. The mayonnaise will add a lovely moistness to the bread.

Step 5

Place one of the prepared egg crepes on top of the mayonnaise-spread bread slice. Then, generously spread our special butter and condensed milk mixture evenly over the egg crepe. It’s important to spread it thoroughly so the sweet and creamy flavor permeates the bread.

Step 6

Take the remaining 2 slices of bread and spread a thin layer of the butter and condensed milk mixture on them as well. This spread is the key to the sandwich’s signature sweetness and tender texture.

Step 7

On top of the spread-covered bread, layer one slice of ham and one slice of cheddar cheese. Finally, cover everything with the other bread slice (the one with the egg crepe).

Step 8

To finish, trim off the crusts of the sandwich with a knife for a neat appearance, then cut it diagonally into triangles. Your delicious Taiwanese-style Ham & Cheese Sandwich is now complete! It’s also wonderful served warm.
