We’ll boil somyeon noodles until perfectly chewy, add crisp cucumber and a soft-boiled egg, then toss it all with a delicious, flavorful sauce. Main Ingredients
  • 2 servings of Somyeon noodles (approx. 200g)
  • 2 eggs
  • 1/4 cucumber
  • A little Naengmyeon broth (optional, for added flavor)
  • A pinch of toasted sesame seeds (for garnish)

Bibim Sauce
  • 2 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Sugar
  • 2 Tbsp Sesame oil

Cooking Instructions

Step 1

Bring a large pot of water to a rolling boil. Add the somyeon noodles and stir gently to prevent them from sticking together. Boil for about 3-4 minutes until al dente. (Cooking time may vary by brand, so check the package instructions.)

Step 2

Once cooked, drain the noodles in a colander. Immediately rinse them thoroughly under cold running water. Rinsing in cold water removes excess starch, resulting in a chewier texture and preventing the noodles from becoming mushy.

Step 3

Prepare the eggs for a perfect soft-boil. Gently place the eggs in boiling water and cook for about 8 minutes. Then, immediately transfer them to an ice bath to stop the cooking process. This ensures a runny yolk and creamy texture.

Step 4

Wash the cucumber, trim the ends, and thinly julienne it. Thinly sliced cucumber adds a refreshing crunch to the dish.

Step 5

Place the cooked and rinsed somyeon noodles in a large serving bowl. Arrange the julienned cucumber and the halved soft-boiled egg attractively on top of the noodles.

Step 6

In a small bowl, combine 2 Tbsp Gochujang, 2 Tbsp sugar, and 2 Tbsp sesame oil. Mix well until you have a smooth, flavorful bibim sauce. For a deeper flavor, you can add a dash of soy sauce.

Step 7

Drizzle the prepared bibim sauce over the noodles and toppings. Sprinkle with toasted sesame seeds to finish. Mix everything together to enjoy your delicious bibim guksu! If desired, you can add a little naengmyeon broth to the noodles before mixing for an even cooler and more refreshing taste.
