Main Ingredients
  • 5 fresh eggs
  • 1 can of tuna, drained
  • A handful of chopped chives
  • A handful of finely diced carrots
  • A pinch of black pepper
  • 1/2 Tbsp cooking wine (mirin or sake)

Cooking Instructions

Step 1

First, crack 3 eggs into a bowl. Add the chopped chives and whisk thoroughly with a fork until the chives and eggs are well combined.

Step 2

Drain the oil completely from the canned tuna. Add the drained tuna, a pinch of black pepper, and 1/2 Tbsp of cooking wine to the egg mixture and stir well. Since the tuna is already seasoned, no additional salt is needed.

Step 3

Heat an egg roll pan or a regular non-stick frying pan over low heat. Pour in some of the tuna egg mixture. Shape the mixture to keep the fillings in the center as you slowly roll it up, according to the pan’s size.

Step 4

Don’t pour all the egg mixture at once. Roll the egg mixture as it starts to set. Tilt the pan, pour more egg mixture into the empty space, and repeat the rolling process 3-4 times to create a thick and beautiful egg roll. Ensure even cooking by moving the pan as you cook.

Step 5

Push the first egg roll to one side of the pan. Crack the remaining 2 eggs into the pan and whisk them. Do not add salt to this egg mixture. Pouring this thin layer once more will make the egg roll even softer and more voluminous.

Step 6

Spread the prepared egg mixture thinly over the entire pan again. Place the previously made tuna egg roll on top and roll it up again. Carefully lift the edges to ensure a neat and well-formed roll that doesn’t fall apart.

Step 7

Once the egg roll is nicely formed, remove it from the pan and let it cool slightly. If you slice it while it’s too hot, it might crumble. Once it has cooled a bit, slice it into bite-sized pieces and serve on a plate for a delicious Tuna and Egg Roll!
