Ingredients
- 1 Korean Zucchini (approx. 300-400g)
- 1 tsp Fermented Shrimp (Saewoojeot)
- 1 tsp Minced Garlic
- 1/4 Onion
- 1/4 stalk Green Onion (white part)
- 1 tsp Toasted Sesame Seeds
- Cooking Oil, as needed
Cooking Instructions
Step 1
Begin by preparing the ingredients for your delicious Korean zucchini stir-fry with fermented shrimp. Wash and prepare the fresh zucchini and aromatic seasoning ingredients.
Step 2
Slice the green onion thinly on an angle to add fragrance. Slice the onion into medium-thick strips to bring out its sweetness. Finely mince the garlic to enhance the flavor of the seasoning.
Step 3
Wash the main ingredient, the Korean zucchini, thoroughly. Cut it lengthwise into quarters, and then into 2-3 larger pieces. Avoid slicing them too thinly, as they might break apart during cooking and affect the texture.
Step 4
Arrange the prepared zucchini pieces nicely on a plate. Stir-frying just before serving will ensure the freshest taste.
Step 5
Heat 2-3 tablespoons of cooking oil in a deep frying pan or a wok over medium heat. Be careful not to burn the ingredients once the pan is hot.
Step 6
Add the prepared Korean zucchini to the pan and stir-fry for about 2-3 minutes until it starts to turn translucent. The key is to lightly cook the zucchini to bring out its natural sweetness.
Step 7
Once the zucchini is slightly translucent, add the sliced onion and continue to stir-fry for another 1-2 minutes until the onion softens and releases its sweetness.
Step 8
Now, add the star of the savory flavor, 1 teaspoon of fermented shrimp and 1 teaspoon of minced garlic. Stir well to combine and continue to stir-fry. Adjust the seasoning according to your preference, as the saltiness of fermented shrimp can vary. If it’s not salty enough, you can add a little more fermented shrimp or season with soy sauce.
Step 9
Finally, add the sliced green onion and stir-fry for another short moment. Stir-fry for just about 30 seconds to allow the fragrant aroma of the green onion to infuse the dish. Cooking for too long can make the green onions mushy.
Step 10
Before turning off the heat, sprinkle 1 teaspoon of toasted sesame seeds over the dish for a nutty aroma. The nuttiness of the sesame seeds helps balance the overall flavor.
Step 11
Enjoy your deliciously stir-fried Korean zucchini with fermented shrimp alongside warm rice! It will be the perfect side dish for a satisfying meal.
