  • 1 bag (500g) pancake mix
  • 270ml milk
  • 2 fresh eggs
  • 2 ripe bananas

Cooking Instructions

Step 1

In a clean bowl, pour 270ml of milk and crack in 2 fresh eggs. Whisk them together gently with a whisk until well combined.

For an even smoother pancake texture, you can strain the egg mixture through a fine-mesh sieve. This step helps eliminate any lumps for a silkier batter.

Step 3

In a separate bowl, have your 1 bag (500g) of pancake mix ready. Ensure there are no large clumps in the mix.

Step 4

Gradually pour the prepared egg-milk mixture into the pancake mix. Stir gently until just combined and no dry flour is visible. Be careful not to overmix, as this can result in tough pancakes.

Step 5

Slice 2 ripe bananas into rounds, about 1cm thick. Try to maintain a consistent thickness; slices that are too thin might break apart during cooking.

Step 6

Gently fold the sliced bananas into the pancake batter. Mix them in carefully to avoid mashing the banana pieces.

Step 7

Preheat your pan over low heat. Lightly grease the pan, then use a paper towel to wipe away excess oil, leaving just a thin film. This prevents sticking. Once the pan is warm, ladle portions of the banana-laced batter onto the pan to form pancakes.

Cook over low heat until small bubbles start to appear on the surface of the pancakes. Carefully flip them over and cook the other side until golden brown. Patience is key; slow cooking over low heat ensures they cook through evenly without burning.
