  • Raw Almonds 90g

Seasoning Ingredients
  • Soy Sauce 6 Tbsp
  • Sugar 2 Tbsp
  • Oligosaccharide (or Corn Syrup) 2 Tbsp
  • Mirin (Rice Wine) 1 Tbsp
  • Sesame Oil 1 Tbsp
  • Toasted Sesame Seeds, a pinch
  • Water 1 cup (200ml)

Cooking Instructions

Step 1

Begin by preparing your walnuts and raw almonds. For the walnuts, ensure any outer shells are removed, leaving just the nut halves. Raw almonds offer a softer texture compared to roasted ones.

Step 2

In a wide pot, bring 1 cup of water to a boil. Once boiling, carefully add the prepared walnuts and almonds and blanch for about 1 minute. This step helps to remove any bitterness and enhance the nutty flavor.

Step 3

Drain the blanched walnuts and almonds thoroughly using a colander. You can also gently pat them dry with a paper towel to remove excess moisture.

Step 4

In a clean pot, combine 1 cup of water, 6 tablespoons of soy sauce, 2 tablespoons of sugar, 2 tablespoons of oligosaccharide, and 1 tablespoon of mirin. Stir well to dissolve the sugar. Add all the drained walnuts and almonds to the pot.

Step 5

Bring the mixture to a boil over medium-high heat. Stir occasionally to ensure the glaze coats the nuts evenly. Once the liquid has reduced by about half, lower the heat.

Step 6

Reduce the heat to low and continue to cook, stirring constantly to prevent sticking and burning. Simmer gently until the glaze thickens and coats the nuts with a glossy sheen. This slow simmering is key to developing the flavor and texture.

Step 7

When the glaze is almost fully reduced and has a sticky consistency, drizzle in 1 tablespoon of sesame oil. Sprinkle a pinch of toasted sesame seeds over the nuts for added aroma and flavor.

Step 8

Quickly stir everything together for a few seconds to incorporate the sesame oil and seeds, then immediately remove the pot from the heat. Overcooking at this stage can make the nuts too hard.

Step 9

Transfer the finished glazed walnuts and almonds to a serving dish. This delicious, sweet, and savory treat is now ready to be enjoyed as a side dish or a delightful snack. It tastes even better once cooled!
