First, let’s boil the eggs. Place 7 eggs in a pot and cover them with water. Add 1 teaspoon of vinegar and 1 teaspoon of salt to the water; this helps make the eggshells easier to peel. Bring the water to a boil over high heat, then reduce to medium-low and simmer for about 5 to 7 minutes. Be careful not to overcook, as this can make the yolk too dry. Once cooked, immediately transfer the eggs to an ice bath to cool them down. Once cooled, gently peel the shells. Tapping the eggs lightly all over to create small cracks can make peeling much easier.

Step 3

Now, let’s prepare the delicious braising liquid. In the same pot (or a clean one), combine the peeled boiled eggs with 1/3 cup of soy sauce and 2 tablespoons of oligosaccharide. You can substitute oligosaccharide with corn syrup or honey if preferred. Adjust the sweetness to your liking.
