Step 1
Here are all the ingredients ready to create our delicious and nutritious potato salad sandwich. We’ll make it extra creamy and subtly sweet for the kids.

In a pot, add enough water to cover the eggs completely. Add 1 Tbsp of vinegar and 1 Tbsp of salt, then boil the eggs until hard-boiled. Boiling for about 12-15 minutes yields a fully cooked yolk. Step 3
Wash the potatoes thoroughly. Cover them with a microwave-safe lid or plastic wrap, poking a few holes in the wrap. Microwave for approximately 9 minutes until cooked through. (Tip: Adjust the cooking time based on the size of your potatoes. Two medium potatoes should be sufficient.)

Similarly, cover the carrot with plastic wrap or a lid and microwave for about 3 minutes until tender. Once cooked, dice the carrot into small pieces, about 2mm thick.

For the cucumber, carefully scoop out and discard the seeds from the center. Then, slice it into pieces about 2mm thick, similar to the carrot.

Dice the microwaved potatoes and the hard-boiled eggs into roughly 2cm cubes. Be careful not to cut them too small, as they might mash when mixed.

In a bowl, combine the cubed potatoes, hard-boiled eggs, diced carrot, and cucumber. Add the mayonnaise (4 Tbsp), honey mustard (1 Tbsp), sweetened condensed milk (2 Tbsp), Parmesan cheese (1 Tbsp), a pinch of pepper, and a pinch of salt. Gently mix everything together, being careful not to mash the ingredients. Taste and adjust seasoning with salt if needed.

For the morning rolls, carefully slice off the top portion. Then, use a spoon to gently scoop out the soft inner bread, creating a hollow space to hold the potato salad.

Generously fill the hollowed-out morning rolls with the prepared potato salad. Pack it in nicely so it looks appealing.
