Did you have a delicious lunch? It’s comforting to have a few tasty side dishes and kimchi at home, isn’t it? I opened the freezer and found some small anchovies, so I made a stir-fry. It’s a super simple dish! This recipe is so easy, anyone can follow along. Introducing an anchovy stir-fry that’s great as a side dish or even a healthy snack for kids.

Main Ingredients
  • 200g small dried anchovies (setomyalchi)
  • 1 Tbsp cooking oil
  • 1 tsp gochujang (Korean chili paste)
  • A little sliced almonds

Cooking Instructions

Step 1

First, prepare the small dried anchovies for stir-frying. If you have them ready, you can use them as is. However, if you’re concerned about any fishy smell, you can lightly toast them in a dry pan to remove moisture, or sift them to remove any powder before cooking for an even crispier and tastier result.

Step 2

Now, to make the seasoning, heat a frying pan over medium-low heat. Once the pan is warm, add 1 tablespoon of cooking oil.

Step 3

Add 1 teaspoon of gochujang to the heated pan. Adding the gochujang first allows it to cook with the oil and dissolve smoothly without clumping.

Step 4

Once the gochujang has dissolved somewhat in the oil, add 1 tablespoon of water and mix well. Adding water will help the gochujang dissolve more smoothly and prevent the seasoning from burning, creating a glossy stir-fry. Stir gently over low heat, making sure the gochujang mixture doesn’t burn.

Step 5

When the seasoning is ready, turn off the heat completely. While the heat is off, add the prepared 200g of small anchovies and gently toss to coat them evenly with the seasoning. This method prevents the anchovies from breaking and ensures the seasoning is well absorbed.

Step 6

Finally, add a handful of sliced almonds and turn the heat back on to low. Stir-fry quickly. Almonds add a nutty flavor and crunch, and they also help prevent the anchovies from sticking to the pan. To avoid burning the anchovies, stir-fry rapidly for about 1-2 minutes, just until the almonds turn lightly golden.

Step 7

Your delicious small anchovy stir-fry is complete! Let it cool slightly, then store it in an airtight container in a well-ventilated place to keep it fresh for a long time. Enjoy this tasty side dish with your rice!
