- Sugar 1/2 Tbsp
- Oligosaccharide (or corn syrup) 2 Tbsp (for gloss and sweetness)

- Cream cheese 2 Tbsp (Philadelphia cream cheese or sliced cheese can be used)
- Gochujang (Korean chili paste) 2 Tbsp
- Soy sauce 1 Tbsp

Cooking Instructions
Step 1
Prepare the dried shredded squid. If using dried squid jerky, cut it into bite-sized pieces (about 5-7 cm). If it’s a bit tough, lightly rinse it in cold water for 1-2 minutes to soften it, then drain thoroughly in a colander. This step helps the seasoning adhere better and improves the texture.
Step 2
Make the seasoning sauce. In a small pot or pan, combine Gochujang (2 Tbsp), soy sauce (1 Tbsp), minced garlic (1 Tbsp), cooking wine (2 Tbsp), sugar (1/2 Tbsp), oligosaccharide (2 Tbsp), and water (2 Tbsp). Mix well until evenly combined.
Step 3
Add cream cheese and cook. To the pot with the mixed seasonings, add the cream cheese (2 Tbsp) and stir gently over low heat until it melts. It’s important to simmer the sauce until the cream cheese is well incorporated.
Step 4
When the sauce simmers, turn off the heat and mix in the squid. Once the sauce starts to gently bubble around the edges, immediately turn off the heat. Add the prepared dried shredded squid to the simmering sauce and carefully toss until the squid is evenly coated. Mixing while it’s hot helps the flavors penetrate well.
Step 5
Serve and plate. Once the squid jerky is well coated with the glossy sauce, it’s ready! Transfer it to a nice serving dish. For an extra touch of flavor and visual appeal, sprinkle some toasted sesame seeds on top.
