Main Ingredients
- 200g chicken breast
- 1/4 stalk scallion, thinly sliced
- 2 bowls water (approx. 400ml)
Cooking Instructions
Step 1
In a pot, combine 2 bowls of water (approx. 400ml), 200g of chicken breast, and 2 Tbsp of sake to remove any gamey odors and tenderize the chicken. Bring to a boil over high heat. Once boiling, reduce heat to medium and simmer for about 10-15 minutes, or until the chicken breast is fully cooked. Remove the cooked chicken breast from the pot, let it cool slightly, then shred it into bite-sized pieces along the grain using chopsticks or a fork.
Step 2
Return the shredded chicken breast to the pot with the chicken broth. Now, let’s season the soup. Add 3 Tbsp of Tsuyu for a rich umami flavor. Season with 1/2 tsp of salt and a pinch of black pepper. Adjust the salt to your preference, as Tsuyu can vary in saltiness.
Step 3
To enhance the aroma and depth of flavor, add 1 Tbsp of minced garlic. Simmer gently over medium-low heat to keep the broth clear. Let it simmer for about 5 minutes to allow the garlic’s fragrance to infuse into the soup.
Step 4
Finally, add the thinly sliced scallions and simmer for another minute until they are slightly softened and fragrant. This adds a refreshing touch to the broth. Ladle the hot Dakgomtang into bowls and enjoy immediately!
