  • Boiled dried radish greens (fresh, not dried) – 1 bunch
  • Salted shrimp – 1.5 Tbsp (adjust to taste)
  • Perilla oil (Korean sesame oil) – 2 Tbsp
  • Minced garlic – 1 Tbsp
  • Sesame seeds (for garnish) – a pinch
  • Cooking wine (optional) – 1 tsp
  • Sugar (optional) – a tiny pinch

Cooking Instructions

Step 1

First, carefully prepare the fresh radish greens cut from the radish. If using fresh, un-dried greens, soak them in water until softened, then boil until tender. This step is crucial for achieving the right texture.

Step 2

Rinse the boiled radish greens thoroughly under running water multiple times. This ensures all dirt and grit are removed, allowing the natural flavor of the greens to shine.

Step 3

Trim off the tough, fibrous ends of the clean radish greens. Cut them into bite-sized pieces. You’ll need about 4-5 stalks for this recipe.

Step 4

Heat a pan over medium heat and add a generous amount of perilla oil. The nutty aroma of perilla oil complements the radish greens beautifully, so don’t be shy with it – more is better for flavor! (Essential! Make sure to use perilla oil.)

Step 5

Add the minced garlic to the pan and sauté briefly until fragrant. Use a typical amount for stir-fries; too much can overpower the dish.

Step 6

Now it’s time for the salted shrimp. Since the saltiness of salted shrimp can vary, start with about 1.5 tablespoons and taste as you go, adjusting to your preference. Salted shrimp is the key ingredient for adding a rich umami flavor.

Step 7

Stir-fry the ingredients together for a moment, then add just enough water to cover the bottom of the pan. Bring to a simmer. For an enhanced flavor and to reduce any slight ‘green’ taste, you can optionally add 1 tsp of cooking wine and a tiny pinch of sugar.

Step 8

Reduce the heat to medium, cover the pan, and let it simmer gently until the radish greens are completely tender. Slow simmering allows the flavors to meld beautifully.

Step 9

Once the radish greens are soft and tender, remove the lid and continue to stir-fry until most of the liquid has evaporated, leaving a flavorful glaze.

Step 10

Finally, sprinkle generously with toasted sesame seeds for a nutty finish. For an extra nutty taste, you can lightly crush the sesame seeds before adding them.
