How to Make Square Fish Cake Fritters (Odeng Jeon) – A Simple Fish Cake Recipe

My family loves fish cakes, so we often make various fish cake dishes like stir-fries and stews. This time, I decided to make a delicious fritter using square fish cakes. They turn out crispy on the outside and chewy on the inside, making them a perfect snack for kids or an accompaniment to drinks!

Ingredients
  • 3 sheets of square fish cake (approx. 145g)
  • 2 Tbsp chopped green onion (or chives)
  • 1 Tbsp chopped carrot
  • 2 Tbsp pancake mix (buchim garu)
  • 2 pinches of salt
  • 2 eggs
  • Cooking oil for frying

Cooking Instructions

Step 1

First, prepare the square fish cakes. If they have a strong smell, you can briefly blanch them in hot water to remove excess oil and make them taste cleaner. Cut the fish cakes into bite-sized square pieces.

Step 2

Wash and finely chop the carrot and green onion (or chives). The carrots add texture, and the green onions or chives provide a nice aroma. If using chives, use the same amount as for green onions.

Step 3

In a wide bowl, crack the 2 eggs. Add the chopped green onion (or chives) and carrot. Season with 2 pinches of salt to lightly flavor the egg mixture. Adjust the salt according to the saltiness of your fish cakes.

Step 4

Using a spoon, whisk the eggs, chopped vegetables, and salt together until well combined. Beat the egg mixture until it’s smooth and slightly frothy.

Step 5

Now, it’s time to coat the fish cakes. Place the cut fish cakes into a clean plastic bag. Add 2 tablespoons of pancake mix and shake the bag gently to evenly coat the fish cakes on both sides. This helps the egg batter adhere better and makes the fritters crispier.

Step 6

Dip the flour-coated fish cakes into the prepared egg mixture. Ensure each piece is thoroughly coated with the egg batter. You can gently press down on the fish cakes to help the egg mixture adhere evenly to the surface.

Step 7

Heat a frying pan over medium heat with a generous amount of cooking oil. Once the pan is hot, carefully place the egg-coated fish cakes onto the pan, ensuring they are not overcrowded. Leave some space between each piece for easy flipping.

Step 8

When the edges of the fish cakes start to turn golden brown, flip them over in the order they were placed in the pan. Fry until both sides are evenly golden and cooked through. Avoid using high heat, as this can burn the outside before the inside is cooked. Medium heat is key.

Step 9

Once the square fish cakes are beautifully golden brown on both sides, turn off the heat and your delicious fish cake fritters (Odeng Jeon) are ready! They taste best served warm. Enjoy them as a side dish with rice or as a tasty snack!
