  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, trim the root end of the spring cabbage. Gently separate the leaves one by one and wash them thoroughly under running water. After washing, drain them well in a colander. Properly draining the water is key to preventing the dressing from becoming watery and ensuring a delicious salad.

Step 2

Since we’ll be using the apple with its skin on, wash it very carefully using baking soda and vinegar. It’s important to wash it thoroughly to enjoy the nutrients from the peel.

Step 3

Tear the drained spring cabbage leaves into bite-sized pieces by hand. In a large bowl, combine the torn spring cabbage with the red pepper flakes, anchovy sauce, minced garlic, plum extract, vinegar, sugar, and toasted sesame seeds to prepare the dressing.

Add the prepared dressing to the spring cabbage and gently mix. Avoid kneading too vigorously, as this can mush the cabbage; mix softly. Next, thinly slice the washed apple into matchsticks and add it to the spring cabbage. Toss gently once more. The addition of apple slices will enhance the crispness and tanginess.
