  • Spinach, 70g
  • Eggs, 2

Seasoning
  • Salt, 1 tsp
  • Pepper, a pinch (to taste)
  • Sesame seeds, a sprinkle

Cooking Instructions

Step 1

First, prepare the spinach by trimming any yellow or wilted leaves. Rinse it thoroughly under cold running water and drain well. This preparation ensures a clean and fresh ingredient for your stir-fry.

Step 2

Crack two fresh eggs into a bowl.

Step 3

Whisk the eggs well with a fork or whisk until the chalazae (the white stringy bits) are broken and the yolks and whites are thoroughly combined. Beating them well will result in a softer, more tender scrambled egg texture.

Step 4

Heat about 1/2 tablespoon of cooking oil in a non-stick pan over low heat. Pour in the beaten eggs and stir gently with chopsticks or a fork to create soft, fluffy scrambled eggs. Avoid overcooking to maintain a tender texture.

Step 5

Gently push the scrambled eggs to one side of the pan, or remove them to a plate. Now, add the prepared spinach to the same pan and begin to stir-fry it.

Step 6

Add the spinach to the pan and lightly mix it with the scrambled eggs. At this point, add a little more cooking oil if needed, and season with 1 teaspoon of salt and a pinch of pepper. You can adjust the amount of pepper to your preference.

Step 7

Add the pre-made scrambled eggs back into the pan and mix everything together with the spinach.

Step 8

Turn the heat up to medium-high and stir-fry quickly, just until the spinach wilts. It’s important not to overcook the spinach, as it can become mushy and lose its flavor. Aim for just a few moments.

Step 9

Turn off the heat. Finally, sprinkle a generous amount of sesame seeds over the stir-fry to finish. This dish is incredibly quick – you can have it ready in just about 2 minutes!

Step 10

Transfer the finished spinach and egg stir-fry to a serving plate. Enjoy it while it’s warm for the best taste and texture.
