  • 150g Radish
  • 1 block Firm Tofu (approx. 300g)
  • 2-3 Scallions

Cooking Instructions

Step 1

Slice the radish quite thinly, either julienned or into thin half-moons, to ensure it cooks quickly and infuses the broth well. Cut the tofu into bite-sized pieces, slightly smaller than one inch, for easy eating with the soup.

Step 2

Heat 1 tablespoon of sesame oil in a pot over low heat. Add 2 tablespoons of gochugaru and stir-fry quickly for about 30 seconds to create chili oil, being careful not to burn it. Burnt gochugaru can make the soup bitter.

Step 3

Add the sliced radish to the pot with the chili oil and stir-fry together. The radish will release some moisture, helping it to cook without burning.

Step 4

Once the radish has been stir-fried for a minute or two, pour in the 800ml of water. Cover the pot and bring to a boil, then let it simmer for about 10-15 minutes, or until the radish becomes translucent and tender.

Step 5

When the radish is tender and translucent, add the cubed tofu. The recipe calls for one whole block, but feel free to use two-thirds of a block if you prefer less tofu. Add the tofu and simmer gently; avoid boiling vigorously as it can break the tofu apart.

Step 6

Add the sliced scallions to the soup. They will add a fresh, aromatic quality to the broth.

Step 7

Season the soup with 1 tablespoon of soy sauce for soup and 1 teaspoon of fish sauce for a deeper umami flavor. Add 1 teaspoon of salt, tasting and adjusting as needed. It’s best to season gradually rather than all at once.

Step 8

Finally, stir in 1/2 tablespoon of minced garlic and let it simmer for another minute to meld the flavors. Your delicious spicy tofu and radish soup is ready to be enjoyed with a warm bowl of rice!
