This is a ‘Jeyuk Bokkeum’ (spicy stir-fried pork) made with soy protein. A flavorful, plant-based alternative that doesn’t compromise on taste!
Main Ingredients
- Soy protein chunks (textured vegetable protein) 130g
- Onion 1/2 medium, thinly sliced
- Green onion 1/2 stalk, diagonally sliced
Spicy & Sweet Seasoning Sauce
- Gochujang (Korean chili paste) 5 Tbsp
- Coarse gochugaru (Korean chili flakes) 3 Tbsp (use fine if unavailable)
- Soy sauce (jin ganjang) 3 Tbsp
- Oligosaccharide 3 Tbsp (or corn syrup, sugar)
- Minced garlic 2 Tbsp
- Sugar 2 Tbsp
- Gochujang (Korean chili paste) 5 Tbsp
- Coarse gochugaru (Korean chili flakes) 3 Tbsp (use fine if unavailable)
- Soy sauce (jin ganjang) 3 Tbsp
- Oligosaccharide 3 Tbsp (or corn syrup, sugar)
- Minced garlic 2 Tbsp
- Sugar 2 Tbsp
Cooking Instructions
Step 1
First, prepare the soy protein. If using dried soy protein, submerge it in plenty of water and let it soak for 30 minutes until rehydrated. If using frozen soy protein, thaw it before use.
Step 2
Peel and wash the onion thoroughly, then thinly slice it into about 0.5 cm thick strips.
Step 3
Trim the root and leafy ends of the green onion, wash it well, and then slice it diagonally into approximately 1 cm thick pieces.
Step 4
In a bowl, combine the gochujang, coarse gochugaru, soy sauce, oligosaccharide, minced garlic, and sugar. Mix well with a spoon to create a delicious seasoning sauce. You can adjust the sugar amount to your preference.
Step 5
Gently squeeze the rehydrated soy protein by hand to remove as much excess water as possible. This step is crucial for preventing excess liquid during cooking and ensuring the sauce coats the protein well.
Step 6
Heat a frying pan with a generous amount of cooking oil over medium heat. Add the squeezed soy protein and stir-fry until it becomes lightly browned and slightly crispy. This helps to develop its texture and remove any distinct flavor.
Step 7
Once the soy protein is nicely browned, add the sliced onion and green onion to the pan. Continue to stir-fry over medium heat until the vegetables soften slightly.
Step 8
When the vegetables become fragrant, add all the prepared spicy and sweet sauce to the pan. Increase the heat to high and stir-fry quickly. Ensure the sauce evenly coats the soy protein and vegetables by stir-frying rapidly. This prevents burning and results in a perfectly cooked ‘Jeyuk Bokkeum’.
