- 0.5 Tbsp sugar
- 1 Tbsp corn syrup (adjust sweetness to taste)
- A drizzle of sesame oil
- A pinch of sesame seeds
Cooking Instructions
Step 1
Prepare the green onions. For a crisp and refreshing texture, it’s best to use the white parts of the green onions. Trim and thoroughly wash the green onions.
Step 2
Thinly slice the green onions into matchsticks. Using a specialized green onion slicer makes it easy to get uniform, thin strands. If you don’t have one, carefully slice them as thinly as possible with a knife, about 0.3 cm thick. Thinly sliced green onions absorb seasonings well and have a pleasant texture. This salad is a fantastic accompaniment to dishes like grilled pork belly (samgyeopsal), bossam, or even fried chicken, cutting through richness and adding vibrant flavor.
Step 3
In a bowl, gather a generous handful of the thinly sliced green onions. Add all the seasoning ingredients. Gochugaru (1 Tbsp) provides a pleasant heat, soy sauce (1 Tbsp) adds umami depth, and vinegar (1.5 Tbsp) brings a bright tanginess. The sweetness comes from sugar (0.5 Tbsp) and corn syrup (1 Tbsp), which can be adjusted to your preference for a sweeter or less sweet dressing. Step 4
Gently toss the green onions with the dressing using your hands or chopsticks. Be careful not to overmix, as this can diminish the crispness of the green onions.
