Main Ingredients
- Pork Bulgogi Meat 300g
- Carrot 1/4 (approx. 30g)
- Onion 1/4
- King Oyster Mushroom 1/3
- Eggplant 2 slices
- Green Onion 1/5 stalk
Seasoning
- Mihyang (or cooking wine) 1 Tbsp
- Minced Garlic 1 Tbsp
- Soy Sauce 4 Tbsp
- Gochugaru (Korean chili flakes) 3 Tbsp
- Gochujang (Korean chili paste) 2 Tbsp
- Sesame Seeds, to taste
- Mihyang (or cooking wine) 1 Tbsp
- Minced Garlic 1 Tbsp
- Soy Sauce 4 Tbsp
- Gochugaru (Korean chili flakes) 3 Tbsp
- Gochujang (Korean chili paste) 2 Tbsp
- Sesame Seeds, to taste
Cooking Instructions
Step 1
First, cut the pork bulgogi meat (300g) into bite-sized pieces, about 3-4 cm long. Place the cut pork in a bowl and gently massage it with 1 Tbsp of Mihyang (or cooking wine). This step helps to tenderize the meat and remove any unwanted odors, resulting in a softer texture.
Step 2
To the marinated pork, add the remaining seasoning ingredients. For this step, add 2 Tbsp of soy sauce, 1 Tbsp of minced garlic, 1 Tbsp of gochugaru, and 2 Tbsp of gochujang.
Step 3
Mix all the seasoning ingredients thoroughly with the pork using your hands until well combined. For a deeper flavor, let the meat marinate for about 10 minutes.

Prepare the vegetables. Slice the carrot, onion, king oyster mushroom, eggplant, and green onion into uniform strips, about 0.5 cm thick. Using leftover vegetables is a great way to clean out your fridge and add varied textures to the dish.

Heat a pan over high heat. Add the marinated pork and stir-fry, spreading it out with chopsticks or a spatula to prevent it from clumping. This ensures the pork cooks evenly and develops a nice texture.

Once the pork is partially cooked, create a small space in the center of the pan and add about 1 Tbsp of cooking oil. Add the sliced carrots first and stir-fry them. Carrots take longer to cook than other vegetables, so sautéing them initially is a good practice.

When the carrots are slightly tender, add all the remaining prepared vegetables (onion, king oyster mushroom, eggplant, green onion) to the pan and stir-fry them together with the pork.
Step 8
Continue stir-frying over high heat, ensuring all ingredients are well mixed and the vegetables are tender but not mushy. Stir frequently to prevent burning.
Step 9
For final seasoning adjustments, add 2 Tbsp of soy sauce and 2 Tbsp of gochugaru if needed. Stir well. Finally, add the chopped green onions and stir-fry briefly to enhance the aroma.
Step 10
This stir-frying method results in a delicious Jeyuk Deopbap with a satisfying crunch from the vegetables and a hint of smoky flavor. Served over rice, it makes for a hearty and satisfying meal.

If you prefer a crispier texture, after adding the vegetables, continue to stir-fry over high heat without adding any liquid, allowing the moisture to evaporate. This will yield an even chewier and more flavorful Jeyuk Bokkeum (stir-fried pork).
