Main Ingredients
  • 200g dried anchovies (gutted and cleaned)
  • 11 Cheongyang peppers (adjust to your spice preference)

Seasonings & Others
  • 2 Tbsp soy sauce
  • 1 Tbsp minced garlic
  • Sesame seeds, for garnish
  • 1 tsp brown sugar (for umami, not sweetness)
  • Generous amount of canola oil or cooking oil

Cooking Instructions

Step 1

First, remove the guts and any sharp fins from the anchovies. Finely chop the Cheongyang peppers after removing their stems. Place the prepared anchovies and chopped peppers in a pan.

Step 2

Drizzle 2 tablespoons of soy sauce evenly over the ingredients in the pan. Stir-frying over low heat, rather than high heat, allows the soy sauce to penetrate the anchovies evenly and prevents burning. Stir and cook until the anchovies and peppers release their aroma.

Step 3

Once the anchovies and peppers are partially stir-fried, add a generous amount of canola oil. Stir continuously to make them crispier. Frying until the oil coats the anchovies and peppers will enhance the flavor.

Step 4

Now it’s time to add the seasonings for umami. Add 1 tablespoon of minced garlic, a sprinkle of sesame seeds, and 1 teaspoon of brown sugar (for subtle umami, not sweetness). Stir quickly to combine everything well. Be careful not to add too much sugar, as it can burn during stir-frying.

Step 5
