Main Ingredients
- 280g fresh oysters
- 1 Tbsp coarse salt (for washing oysters)
- 2 handfuls radish, thinly sliced
- 1 handful green onion, diagonally sliced
- 1 green chili, diagonally sliced
Oyster Marination
- 2 Tbsp cooking wine (like mirin)
- 2 Tbsp soju (or white wine)
- 1/2 Tbsp minced garlic
- 1/2 Tbsp salt
Radish Marination
- 1 Tbsp red chili powder (gochugaru)
- Pinch of salt
- 1 tsp sugar
Oyster Salad Seasoning
- 3 Tbsp red chili powder (gochugaru)
- 1 Tbsp anchovy sauce (or fish sauce)
- Pinch of salt
- Pinch of sesame seeds
- 2 Tbsp cooking wine (like mirin)
- 2 Tbsp soju (or white wine)
- 1/2 Tbsp minced garlic
- 1/2 Tbsp salt

Cooking Instructions
Step 1
First, thinly slice the radish into bite-sized pieces, about 0.5cm thick. Next, thinly slice the green onion and green chili diagonally. Prepare these vegetables for the salad.
Step 2
In a bowl, combine the thinly sliced radish with the radish marination ingredients: 1 Tbsp gochugaru, a pinch of salt, and 1 tsp sugar. Gently mix them together and let it sit for about 5 minutes to allow the flavors to meld.
Step 3
Now, it’s time to thoroughly clean the fresh oysters! These are the fresh ones we picked up from the market.
Step 4
Place the oysters in a colander and rinse them lightly under running water. Then, add 1 Tbsp of coarse salt and gently swirl the oysters around to clean them. Rinse them 2-3 times this way, and finally, rinse thoroughly under cold running water to remove any remaining salt and impurities. This step is crucial for removing any fishy smell and ensuring a clean, fresh taste.
Step 5
Since we are using fresh oysters, it’s important to marinate them directly so the dressing adheres well. Combine the oysters with the oyster marination ingredients: 2 Tbsp cooking wine, 2 Tbsp soju, 1/2 Tbsp minced garlic, and 1/2 Tbsp salt. Gently mix everything together, handling the oysters with care.
Step 6
Now, let’s assemble the salad! Add the marinated oysters, sliced green onions, and green chilies to the bowl with the marinated radish.
Step 7
Finally, add the oyster salad seasoning: 3 Tbsp gochugaru, 1 Tbsp anchovy sauce, a pinch of salt, and a pinch of sesame seeds. Gently toss everything together until well combined. Taste the salad before serving and adjust the seasoning with salt if needed, according to your preference. If you like it spicier, feel free to add more gochugaru or some chopped fresh chili peppers. For a refreshing touch, you can also add thinly sliced pear right before serving. However, be aware that pear releases a lot of water, so it’s best to add it only if you plan to eat the salad immediately.
