Stew Ingredients
- Pork (for stew) 200g
- Clams 10 (purged)
- Zucchini 200g
- Tofu 100g
- Onion 50g (approx. 1/4)
- Green Onion 15g (approx. 1/4 stalk)
- Cheongyang Peppers 2
- Red Chili Pepper 1/2 (for color, optional)
- Seafood Broth 2 cups (simmered with dried anchovies, kelp, etc., or use a tea bag)
- Rice Water 1/2 cup
Seasoning Ingredients
- Gochujang (Korean chili paste) 1 Tbsp
- Gochugaru (Korean chili flakes) 1/2 Tbsp
- Fish Sauce (or Tuna Extract) 1 Tbsp
- Soy Sauce for Soup 1 Tbsp (adjust to taste)

Cooking Instructions
Step 1
First, prepare all the ingredients for the stew. Cut the tofu into thick slices, about 1.5 to 2 cm thick. Finely chop the onion, green onion, Cheongyang peppers, and red chili pepper. Rinse the purged clams thoroughly.
Step 2
Slice the zucchini into pieces of similar thickness to the tofu. Cut the 200g of pork, meant for stew, into bite-sized pieces.
Step 3
In a ttukbaegi (earthenware pot) or a regular pot, combine the seafood broth (2 cups) and rice water (1/2 cup). Add the sliced pork and bring to a boil over high heat. Skim off any foam that rises to the surface for a clearer broth.
Step 4
Once the pork starts to cook, stir in the gochujang (1 Tbsp) and gochugaru (1/2 Tbsp) until dissolved. Next, add the zucchini and onion slices and continue to simmer. After the seasonings have blended, add the fish sauce (or tuna extract) for an umami boost. It’s best to hold off on adding the soy sauce for soup until later, after tasting.
Step 5
When the zucchini and onion are somewhat tender, add the purged clams and the cubed tofu. Cook over medium heat until the clams open and the tofu is cooked through, letting it bubble gently.
Step 6
Finally, taste the broth and adjust the seasoning with soy sauce for soup if needed. Add the chopped green onions and chili peppers. Let it simmer for another moment until everything is well combined. Your delicious and spicy Pork and Gochujang Stew is ready to be enjoyed with a hot bowl of rice!
