I recently bought some delicious Yeosu mustard greens, and their sharp, refreshing flavor was so good, I polished off a whole bowl of rice! They’re the perfect side dish to whet your appetite. It reminds me of the broadcast where Chef Baek Jong-won introduced various dishes using mustard greens, and the mustard greens fried rice came to mind. It’s incredibly simple to make and tastes so wonderfully delicious – I highly recommend it! The recipe is so easy that I felt compelled to share it.

Serves 1
  • 3 bundles of mustard greens (chopped into bite-sized pieces)
  • 1/2 can of Spam (diced)
  • A little bit of green onion (chopped)
  • 1 egg
  • 1 serving of rice (chilled or cooled rice recommended)
  • 1 tbsp sesame oil
  • A pinch of sesame seeds

Cooking Instructions

Step 1

Heat 1-2 tablespoons of oil in a frying pan over medium heat. Add the chopped green onions and stir-fry until fragrant, creating green onion oil. It’s important to sauté them gently until their aroma is released.

Step 2

Add the diced Spam and stir-fry until golden brown. You can also use diced bacon or sausage instead of Spam. The fat from the Spam will blend in and enhance the flavor.

Step 3

Add the chopped mustard greens and stir-fry with the Spam and green onion oil. The sharp flavor of the mustard greens will mingle with the oil, making your mouth water.

Step 4

Add 1 serving of rice and stir-fry until well combined with the other ingredients. The key is to fry the rice until each grain is separate and fluffy. Using rice that has cooled down or cold rice works better than piping hot rice, as it prevents the grains from clumping and results in a crispier texture. (e.g., If using a pre-cooked rice pack, heat it on the ‘cold rice’ setting or let it cool beforehand).

Step 5

Finally, drizzle in 1 tablespoon of sesame oil (using a standard tablespoon measure). The nutty aroma of sesame oil will further elevate the flavor of the fried rice.

Step 6

Once everything is nicely stir-fried, turn off the heat. Sprinkle with sesame seeds for a visually appealing and fragrant finish. Your delicious mustard greens fried rice is ready!

Step 7

If desired, top with a fried egg. Break the yolk and mix it with the fried rice for an even richer taste!
