Main Ingredients
  • 1 cup ripe kimchi (approx. 150g), finely chopped
  • 1 serving udon noodles (frozen or fresh, approx. 200g)
  • 2 sheets of fish cake, cut into bite-sized pieces
  • 500ml water (approx. 2.5 cups)
  • 1 bouillon cube or 1 tsp powdered broth mix

Cooking Instructions

Step 1

First, prepare the kimchi. Measure about 1 cup of well-fermented kimchi. Drain some of the kimchi juice, then finely chop the kimchi. If your kimchi is very sour, adding a little sugar will help balance the flavor.

Step 2

Take a deep pot or pan and lightly grease it with cooking oil. Preheat over medium-low heat.

Step 3

Add the chopped kimchi and 1 tsp of sugar to the preheated pan. Sauté for about 2-3 minutes until the kimchi softens. The sugar helps to remove any bitterness from the kimchi and enhances its savory flavor.

Step 4

Once the kimchi is somewhat sautéed, add 1 tbsp of gochugaru and stir-fry for another minute. This step helps to cook out the raw taste of the chili powder and deepens the broth’s color.

Now, pour in 500ml of water (about 2.5 cups) and add 1 bouillon cube or 1 tsp of powdered broth mix. This forms the base of your flavorful broth.

Once the broth comes to a boil, add 1 tbsp of soup soy sauce and 2-3 tbsp of tsuyu. If you don’t have tsuyu, you can use regular soy sauce. Taste the broth and adjust the amount of soy sauce and tsuyu to your preference. For a spicier kick, you can add more gochugaru at this stage.

While the broth is simmering, cut the 2 sheets of fish cake into strips about 1cm wide and add them to the pot. The fish cakes will absorb the delicious broth, adding more flavor.

Once the fish cakes have cooked slightly, add the udon noodles. Gently separate the noodles to prevent them from sticking together and continue to boil for about 2-3 minutes, or until the noodles are cooked through.

Finally, add the optional sliced green and red chili peppers. The green chili adds heat, while the red chili provides a vibrant color. Feel free to omit these if you prefer.

Add the diagonally sliced green onions generously. Let everything simmer together for a moment to allow the flavors to meld beautifully. The green onions add a fresh aromatic quality to the broth.
